Meal Prep Broccoli & Quinoa Salad

Ingredients:

1/2 cup Quinoa (uncooked)

1 1/2 cups water

4 cups Broccoli (stalk and trimmed)

1/4 cup Pitted Dates (chopped)

3 stalks Green Onion (chopped)

1/3 cup Pumpkin Seeds

1/2 tsp Sea Salt

1/3 cup Parmigiano Reggiano (shaved)

3 tbsps Lemon Juice

1/4 cup Extra Virgin Olive Oil
